Residents and visitors to the Colyton, Lyme Regis and Axminster area will now be able to sample some top quality food at the new Reeds Restaurant at Swallows Eaves hotel in Colyton.
With chef Mathew Caruana at the helm, they are keen to achieve recognised accolades such as AA “rosettes” and the Michelin “Bib Gourmand” rating; where restaurants are rated as offering “good food at moderate prices – £28 or less for three courses,”
Says Caruana “few chefs have travelled and cooked in countries throughout the world – from Africa to New Zealand, I’ve been privileged enough to explore and work in these countries and my cooking has without doubt, developed and grown as a consequence.
His menus, which change daily, can be described loosely as “modern British”. Dishes use the best seasonal and local ingredient, are based upon tried and tested combinations while making use of the influences gained from his travels, all come together to provide inspiration and shape to his menus. Choices such as Shredded confit of Devon Rabbit with parsnip purée, braised shallot & roast garlic, and Brixham Clam & saffron risotto with bacon & rocket are just an indication of the dishes offered to diners.
Stylistically the restaurant has been remodelled into a light & airy room, accommodating just 22 people also offers an intimate dining experience where the quality of the food is matched by seemingly effortless service.
